Rum Balls


I love Christmas, mainly because of all the treats that are made and seeing your family together in one spot. One of my favourite treats are rum balls and I decided to make a batch of them today and share the recipe :)

I got this recipe from a blog called Exclusively Food, however I have adapted and changed some of the measurements in the recipe to suit myself.

Ingredients
250g Nice biscuits (if you don't know what they are, click here)
4 tablespoons of cocoa powder
A heaped 1/2 cup of desiccated coconut
1 teaspoon of vanilla essence
4 tablespoons of rum
1/2 cup of sultanas
1 tin of condensed milk
Chocolate sprinkles
Extra coconut

Method
Crush Nice biscuits using a processor. If you don't have one (like me) put a few biscuits into a sandwich bag, seal it up and then get a rolling pin and smash them up. After this is done, put all the ingredients into large bowl and combine together. Put the bowl in the fridge for about 30 - 60 minutes until it's set well to roll into balls. After the mixture has set, get 2 small plates and put coconut on one and chocolate sprinkles on the other for coating the rum balls. Leave the balls to set in the fridge overnight so the flavours can mix together well. Enjoy! :)
